You are in luck! In the Art Museum near Condado is a very upscale place owned by Wilo Benet, perhaps one of the best-known chefs in Puerto Rico. Not sure what types of fine dining you seek, but some of my suggestions would be: In Condado, Pamela's Numero Uno has terrific food and seating both indoors and right on the sand overlooking the beach. A new restaurant, Niche, just opened off of Calle Taft in Acacia Seaside Inn. Very intimate setting, great food. A true find!! In Old San Juan, there are a number of great restaurants on Calle Fortaleza. Some I've eaten at are Dragonfly and The Parrot Club, both owned by the same company, but there really are numerous options. I live in Condado, so I tend to frequent places there. For Mexican food, hands-down, myself and other American friends LOVE Tijuana's in Condado. Personal favorite is the carnitas. Great margaritas as well.

Gosh, I can hardly believe I am hesitate to include "Ruths Chris", there is one in San Juan, PR.........I think you've already gotten GREAT suggestions and would be insane not to try them!

You can go to the Zipperle. It is an upscale restaurant on San Juan near Plaza Las Americas (biggest mall in PR). I've never been there because it is so expensive to dine in. But it is very popular among loca tv stars.

There are so many, unfortunately it has been a while that I have not eaten at a upscale restaurant in PR. However, I do highly recommend asking this same question at tripadvisor.com as you will get many answers and perhaps interesting ones if you will.
One thing for sure is that many upscale hotels in San Juan have upscale/fine dining restaurants.

For Upscale restaurants this are my recommendations:
1. Morton's in the Caribe Hilton, Puerta de Tierra.
2. La Piccola Fontana in the El San Juan Hotel y Casino, Isla Verde.
3. El Zipperle in Hato Rey.
4. Al Dente in Old San Juan.
5. La Casona, Santuce.
For Mexican restaurants try:
Margarita's or Aurorita's both in Puerto Nuevo area.
